Eggless Custard and Jam Cookies

oday I promised my daughter for a play date with her friend but could not make it, the result was a upset kid at home, which I don't like. To make her happy I proposed to bake cookies........she was very excited because I was allowing her help in cooking. She wanted to bake chocolate cookies.....alas the pantry was out of coco powder. After much discussion, we settled for jam cookies. I googled for a nice recipe and followed it but that was also a disaster. It was asking for more butter than required so the result was a flat and burnt cookies. Finally I added some custard powder to the remaining cookie dough and came up with these mouthwatering cookies.





Ingredients
All purpose flour - 1 1/2 cup
Mango custard - 1/2 cup
Powder sugar - 1/2 cup
Cardamom powder - 3/4 tsp
Baking Powder - 1/2 tsp
Salt - 1/4 tsp
Butter - 1/2 cup melted
Curd - 2 tbsp
Jam - the flavour you like

Method
Preheat oven at 375 f. Mix all the ingredients together and make a dough. Make a small ball and press it between your palms. Make a shallow dent in the cookies. I've used a lid of a bottle, You can use your thumb too. Add little jam in the dent and arrange in lightly greased baking sheet. Put them in the oven for around 13 mins. The colour of the cookies will slightly change when they are done. Allow them to cool on wire rack for 10 mins.

Home made Bourbon- My first Biscuit

My kids are very fond of chocolate cookies so I thought to make them over this weekend. This was my first successful attempt after facing several disasters in the past. Biscuits are kid's treat and if they are made with cream layer in between..... can be irresistible for adults too.
I found the recipe here and decided to follow that but afterwards I realised that it is not going to work with me so little changes in the recipe.
