Aloo Yam Chat (Microwave)

If you mix Boiled potatoes and yam and toss some masala it will become a mouthwatering chat. It can be served as a starter or a tea time snack.






Ingredients
Potatoe and Yam cubes - 1 cup
Onion - 1/4 cup
Cilantro leaves - for garnish
Mint leaves - 1 tbsp
Butter - 1 tsp


Masala
Salt - per taste
Kala Namak - 1/4 tsp
Chilli powder - 1/4 tsp
Rosted cumin powder - 1/3 tsp
Sugar - 1/2 tsp
Chat masala - 1/2 tsp
Method
Take the potato and yam cubes in a microwave safe bowl . Put 1 tbsp water in it and butter. Cover and microwave for 5 minutes. Stir once in between. Check after 5 minutes if the cubes in bowl are soft enough.
Add masala and chopped onion. Add chopped cilantro leaves and mint leaves. 
Ready to serve.

Stuffed Aloo Tikki Chat

hhole Tikki Chat is one of the most popular street food in north India. It is served piping hot with green chutney, tamarind chutney and spicy yogurt.



Ingredients:
For outer Layer:
Boiled and mashed potatoes - 1 1/4 cups
Bread - 2 slices
Salt

For stuffing:
Boiled and mashed potatoes - 3/4 cup
Thawed and crushed peas - 1/4 cups
Paneer cut into small pieces - 1/4 cups
Chopped Cashews - 12 no
Chopped Cilantro - 1/4 cup
Coriander powder - 1/2 tsp
Salt - 1 tsp
Chopped Green chillies - 3
Oil

Method:
Soak the bread in water. Squeeze out the excess water and crumble it.  Mix the ingredients listed under  outer layer. Knead well to make the dough. Dived into 10 equal parts. Keep aside.
Mix all the ingredients listed under For stuffing except oil. Dived into 10 equal parts.
Grease the hands. Flatten out one outer portion and place a portion of stuffing in the middle. Close the ball by bringing the edges together in the center. The stuffing should be secure inside.  Repeat this until all the 10 are done.
Heat a nonstick pan and drizzle some oil on it.  Place the Pattie and cook til golden brown. Flip it and cook another side. Press a little and cook until crispy and golden. Drizzle some oil time by time. Cook 2-3 patties at a time.




Prepare options:
Prepare green chutney, tamarind chutney, Spicy yogurt.

Option 1 - Chhole Tikki Chat
Place a tikki in a plate. Prepare chhole. Find Chhole recipe here. Pour the chhole on the tikki. Pour spicy yogurt. Spread green chutney and tamarind chutney. Spread sev and serve hot.




Option 2 - Dahi tikki
Place a tikki in a plate. Pour spicy yogurt on it. Spread green chutney and tamarind chutney. Serve hot.




Option 3 -  Burger
Place the aloo tikkie between the bun slices with onion and tomato slices. Add green chutney, tamarind chutney, tomato ketchup for taste.

Dahi Vada-Lentil Dumplings in Yogurt

 I spent my growing up years  in a small town in India. Small towns, small buildings,  greener trees and wider skies . This town I am talking about was so small that it did not even have an air-conditioned restaurant. Though the town had no decent restaurant, but Dahi Vada chat from a small shop carries a big name. I can not think of visiting that town without  enjoying that chat....mouth watering.
 Dahi Vada is  an Indian 'chaat' item popular all over India. It can be served as a great starter or a cold appetizer. Dahi vadas are lentil (moong dal) based savory balls. The hot deep fried vadas are fist put in the warm water and then transfered to fresh beaten yogurt.  To add flavor, it can be topped with coriander leaves, chilli pd, black pepper pd, chat masala, cumin pd or boondi with tamarind chutney.
My love for Dahi Vada convinced me that Dahi Vada is "fried but not oily". I do fry it, though  soaking of the vada in water after the deep frying gets rid of most of the oil, I thinks! It can be my excuse to eat it more and more :-))
