We love kadhi. It can be made in different ways. But the basic recipe is same. It is made of a thick gravy of sour yogurt and chickpea flour. You can find it in different consistency. Kadhi Chawal is a great combo. If you taste it once, I bet that you will crave for it again and again. My husband, who is not a big fan of yogurt based gravies, loves Kadhi a lot.
Here is how I made it:
Ingredients
Kala Channa (boiled) - 3/4 cup
Yogurt - 1 1/2 cups
Gram flour - 1 tablespoon
Water - 1 cup
Turmeric powder - 1/4 teaspoon
Salt - according to taste
Red chilli powder -1/2 teaspoon or per taste
Coriander powder - 1 teaspoon
Green chilli chopped - 1-2
Ghee/ oil - 1 tablespoon
Garam masala - 1/2 teaspoon
Asafoetida - a pinch
Fenugreek seeds - 1/4 teaspoon
Ginger Garlic paste - 1/2 spoon
Onion - 1 small
Kasoori methi - 1 tablespoon
Fresh coriander leaves finely chopped
METHOD In a mixing bowl mix yogurt, gram flour, turmeric powder, salt, red chilli powder, coriander powder and whisk well so that no lumps form. I usually give it a quick run in a mixer. Add water to this mixture. Heat ghee in a pan. Add fenugreek seeds and asafoetida. When they begin to change colour add onion and ginger garlic paste. When the onions become transparent add the yogurt mixture and stir.Add chopped green chillies. Bring it to a boil and reduce the flame to medium and let it simmer for another 15 mins, stirring occasionaly. Add chaana and kasoori methi, cook for another 15 minutes. Add gram masala in the end. Garnish with coriander leaves and serve hot. It is served with chilli ghee. For Chilli Ghee you need Ghee - 1 tablespoon Red chilli powder 1/2 teaspoon Mustard seeds - 1/2 teaspoon Take a small pan, add 1 tablespoon ghee. When it is hot add mustard seeds and red chilli powder. The ghee is ready. Take care, the chilli powder should remain red, if the ghee is too hot very soon the color of chilli powder can turn into black.
