I found the recipe here and decided to follow that but afterwards I realised that it is not going to work with me so little changes in the recipe.
Ingredients
All Purpose Flour/Maida - 1 cup + 2tablespoon
Sugar - 1/3 cup +1 tablespoon
Butter - 3/4 cup
Baking Soda - 1/4tsp + 1/8 teaspoon
Honey - 1tsp(optional)
Baking Powder - 1 tsp
Cocoa powder - 2 tablespoon
Vanilla Essence - 2tsp
Butter - 3/4 cup
Baking Soda - 1/4tsp + 1/8 teaspoon
Honey - 1tsp(optional)
Baking Powder - 1 tsp
Cocoa powder - 2 tablespoon
Vanilla Essence - 2tsp
For Filling(Butter icing)-
Butter 1/4cup
Icing Sugar 1/3 cup
Cocoa 1 tsp
Vanilla Essence a few drops
Icing Sugar 1/3 cup
Cocoa 1 tsp
Vanilla Essence a few drops
Method
Sieve together all purpose flour, coca powder and baking powder. Keep aside.
In a mixing bowl beat the butter and sugar until fluffy. Add vanilla essence, baking soda and honey and mix well.
Mix the flour mixture to this and mix well.
It should be in a shape of a soft dough. Roll out the dough as a big chapathi. Use little flour for dusting as needed.
Now it is a fun part. Cut the desired shapes from this dough. My kids did enjoyed this part. They cut them in their name alphabets.
Use a toothpick to make the tiny holes.
Spread the sugar on the cookies and place them in preheated oven on 310 F for 10 - 13 min.
Check them after 8 mins. If the sides are started getting brown, they are done.
Take them out from the oven and let them cool on the same tray for 3 mins. Cookies will be soft when you take them out from the oven but they will get crispy in another few mins.
Making the cream
Mix all the ingredients listed for filling. The cream is ready to use.
Apply the cream and form a sandwiched Biscuit.

Note - I felt that I could have used less butter. Next time I
should try them with 1/2 cup butter.
These cookies are on their way to Champa's Bake Off event.
