Baked Palak Paneer

Palak Paneer is all time favorite for all most everyone. Traditional Indian Palak Paneer is made from a soft fresh cheese, called paneer. Here is another recipe with a different style.







 Baked Palak-Paneer  - what a combination !

Palak - 2 bunches
Cornflour - 2 tsp ( roughly)
Paneer - 1 cup ( grated)
Onions - 1, medium, chopped
Green chillies - 2, finely chopped
Boied vegetables - 1 cup ( can be a combination of peas, carrots, beans, cauliflower, corn, babycorn etc)
Corriander powder - 1 tsp
Garam masala - 1/2 tsp
Chat masala - 3/4 tsp


For sauce:


Red bright tomatoes - 4, 5
Red chilli powder - 1 tsp
Salt, sugar
Oil - 2 tsp + 2 tsp
Butter - 2 tsp


Method
Take out the palak leaves, clean & wash them. Boil plenty of water in a veesel, drop the drained leaves & switch off. After 10 mts, drain & grind the drained leaves to a paste. Heat 2 tsp oil & lightly fry half the chopped onions & green chillies.Add corriander powder.  Now add palak paste & salt. Then add the cornflour, & fry for a few secs. When the mass thickens,add garam masala, remove & spread at the bottom of a casserole.




Add salt and chat masala on the vegetables. Spread the mixture of grated paneer ( reserving some for topping )mixed with boied vegetables on the palak gravy.




Heat 2 tsp oil & lightly fry the remaining onions. Meanwhile put the chopped tomotoes in the microwave for 6 mins or untill tender. Now add chopped tomtoes, chilli powder & salt to the onion. Fry lightly. Liquidise & pour over the assembled mixture.




Spread the reserved paneer & dot with butter. Bake in a hot oven for 30 mts. Serve hot.
