Vegetable Dum Biryani

iryani........when we think about biryani or biriani the image pops in our mind is spiced rice layered with lamb, chicken or vegetables. As mine is a vegetarian kitchen, we can think about only vegetable biryani. What is the difference between biryani and pulav? Pulav is made by cooking all the items together but in biryani rice and a thick curry is cooked separately and then arranged in layers. I layered this dish in Pyrex 8" square dish because that can go to oven to fridge to dining table.

Ingredients
Rice
Basmati rice - 1 1/2 cup
Water - 3 cup
Oil - 1 tbsp
Ginger garlic paste - 1 tsp
Green chilli - 1
Bay leaves - 2
Cloves - 4
Cinnamon stick - 2
Green Cardamom - 2
Black Cardamom - 2
Cumin seeds - 1 tsp
Salt - 1/2 tsp

Vegetables
Onion - 1 medium
Carrot - 2
Tomato - 2
Beans - 1/2 cups
Peas - 1/2 cups
Corn - 1 cup

Marinate
Yogurt - 1 1/2 cups
Salt - 3/4 tsp
Red chili powder - 1 tsp
Garam masala - 1/2 tsp
Kasoori methi - handfull
Cumin powder - 1/2 tsp
Coriander powder - 1 tsp
Ginger powder - 1/2 tsp

Method
In a bowl mix all the ingredients listed under marinade. Chop carrot and beans. Mix all carrot, beans, peas and corn in the yogurt mixture and put that in the fridge for few hours.
Wash and soak the rice for 30 mins. Heat oil in a heavy bottom pan. Add all the masalas listed under rice,  add rice and stir it once. Add water and cook the rice until 90% done.
Add oil in a separate pan. Once the oil is hot, add onion and fry it till in turns translucent. add ginger garlic paste and green chilli and fry for a min. add chopped tomato and stir for few mins. Add the marinated mixture. Cover and cook the vegetables on low heat. Yogurt should be cooked on low heat otherwise it may curdle. Cook it for about 30 mins.
Preheat the oven on 300F. In a baking dish add half the rice. Add the vegetable sauce. Add rest of the rice. Cover it with foil and put it in the oven for about 30 mins.
Serve warm with mint chutney or raita.
